  • Pita bread or lettuce leaves (for serving)

Instructions

  1. Combine: In a large mixing bowl, combine the ground chicken, breadcrumbs, and grated Parmesan cheese.
  2. Season: Add the finely chopped parsley, minced garlic, dried oregano, ground cumin, salt, and black pepper to the bowl.
  3. Mix: Crack the large egg into the mixture and mix all the ingredients together using your hands until well combined. Avoid overmixing.
  4. Chill: Cover the bowl with plastic wrap and let it sit in the refrigerator for about 30 minutes.
  5. Shape: Remove the bowl from the refrigerator. Take a portion of the mixture (about 1/4 cup) and shape it into a patty, about 1/2 inch thick.
  6. Arrange: Place the shaped patties on a plate or a baking sheet lined with parchment paper, leaving space between each patty.
  7. Repeat: Repeat until all the mixture is shaped into patties (about 8-10 patties).
  8. Heat: Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  9. Sear: Carefully place the patties in the skillet, ensuring not to overcrowd the pan.
  10. Cook: Cook for about 4-5 minutes on one side until golden brown, then flip and cook for another 4-5 minutes on the other side until fully cooked (internal temperature should reach 165°F/75°C).
  11. Drain: Transfer the cooked patties to a plate lined with paper towels to absorb excess oil.
  12. Prepare Base: Prepare your serving base using pita bread or lettuce leaves. Warm the pita if desired.
  13. Serve: Serve the patties with diced tomatoes, red onion, crumbled feta cheese, sliced black olives (if using), and tzatziki sauce.
