Description

Creamy, high-protein egg bites cooked gently using the sous vide method for a smooth, café-style texture.


Ingredients

Scale
  • 4 large eggs
  • 1/2 cup low-fat cottage cheese
  • 1/3 cup shredded cheddar cheese
  • 1/3 cup shredded Gruyère cheese
  • 3 strips turkey bacon or beef bacon, cooked and finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • Small pinch cayenne pepper (optional)

Instructions

  1. Step 1: Preheat sous vide water bath to 185°F.
  2. Step 2: Blend eggs, cottage cheese, cheeses, and seasonings until smooth.
  3. Step 3: Distribute bacon into silicone molds.
  4. Step 4: Pour egg mixture into molds and top with parsley.
  5. Step 5: Seal and cook in water bath for 25–45 minutes until set.
  6. Step 6: Rest 10 minutes, release, and serve warm.

Notes

Use fresh shredded cheese for best texture. Store leftovers refrigerated up to four days. Reheat gently to maintain creaminess.
