- 4 large eggs
- 1/2 cup low-fat cottage cheese
- 1/3 cup shredded cheddar cheese
- 1/3 cup shredded Gruyère cheese
- 3 strips turkey bacon or beef bacon, cooked and finely chopped
- 2 tablespoons fresh parsley, finely chopped
- 3/4 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- Small pinch cayenne pepper (optional)
Instructions
- Step 1: Preheat sous vide water bath to 185°F.
- Step 2: Blend eggs, cottage cheese, cheeses, and seasonings until smooth.
- Step 3: Distribute bacon into silicone molds.
- Step 4: Pour egg mixture into molds and top with parsley.
- Step 5: Seal and cook in water bath for 25–45 minutes until set.
- Step 6: Rest 10 minutes, release, and serve warm.
Notes
Use fresh shredded cheese for best texture. Store leftovers refrigerated up to four days. Reheat gently to maintain creaminess.
