Ingredients

  • 1 red bell pepper
  • 1 teaspoon cumin
  • 2 tablespoon chili powder
  • 1 cup corn kernels
  • 2 cup cheddar cheese
  • 1 cup monterey jack cheese
  • 28 oz diced tomatoes
  • 15 oz kidney beans
  • 8 oz tortilla chips
  • 1 lb ground beef

Instructions

  1. Preheat: Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Brown Beef: In a large skillet over medium-high heat, cook the ground beef until browned and cooked through, breaking it up with a wooden spoon as it cooks. Drain any excess fat.
  3. Sauté Vegetables: Dice the onion and red bell pepper. Mince the garlic cloves. Add the diced onion, minced garlic, and diced red bell pepper to the skillet with the ground beef. Cook until the vegetables are softened, about 5 minutes.
  4. Season: Stir in the chili powder, cumin, and diced tomatoes with their juices. Simmer for 5 minutes, allowing the flavors to meld.
  5. Combine: Drain and rinse the kidney beans. Add the kidney beans and corn kernels to the skillet. Stir to combine and remove from heat.
  6. Layer: Arrange a layer of tortilla chips in the prepared baking dish. Spoon half of the chili mixture over the chips. Sprinkle half of the shredded cheddar cheese and Monterey Jack cheese over the chili. Repeat the layers with the remaining chips, chili mixture, and cheeses.
  7. Bake: Bake the chili cheese casserole for 25-30 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
  8. Serve: Remove the casserole from the oven and let it cool for 5 minutes. Serve the chili cheese casserole hot, garnished with your favorite toppings, if desired.
